I absolutely love jalapeno poppers with cream cheese. They are an unholy addiction that I cannot resist, so when I find a recipe that incorporates the principle of a popper into a main course, it’s guaranteed that I’m going to try it. I will admit to having some difficulty finding recipes that are both delicious and worth the effort it takes to make. Stuffing these chicken breasts takes some finesse, but once you have the hang of it, the prep becomes a breeze and it’s so much easier than pounding cutlets or rolling them up as I’ve seen some other recipes call for.
